This is one of my favorite go to soup recipe to warm us up on a cold winter night. It’s hearty, filling and so flavorful, serve it with some spicy nuts and fresh crusty bread and call it a meal!
½ lb lamb or beef bones
1 medium onion diced
1 butternut squash (about 3 lb) peeled and diced
2 carrots peeled and diced
2 leeks chopped
4 cloves garlic
2 teaspoon salt
½ teaspoon black pepper
2 Tablespoon oil
Put oil in a large pot add the onions and sauté for 5 minutes.
Add the lamb or beef bones cover the pot and cook on a low flame for half hr. Add the rest of the ingredients cook for additional 10 minutes then add water to cover the vegetables (about 6 cups).
Cook on medium flame for 45 -60 minutes, remove the meat from the pot and blend the remaining soup.
Add the meat back to the pot, serve with curry seeds or croutons.
