Citrus Chicken

If you follow me on instagram you already know that I love to use fresh and seasonal produce, the bold flavors and colors definitely helps in getting my family excited over the food they eat. A few days ago I was working on a few different recipes with citrus when it hit me how beautiful and delicious a dish with all different kind of citrus combined would be, so here I am sharing this winning citrus chicken recipe with you.


1/4 cup pomegranate concentrate
2 Tbs oil
5 cloves garlic crushed
1 tsp salt
1/2 tsp black pepper
6 chicken legs
4 citrus fruits, sliced (lemon, lime, orange, blood orange, grape fruit, tangerine,)
a few spring of thyme

Preheat the oven to 425 degrees F.
Mix the first five ingredients and set aside. Arrange some of the citrus slices on the bottom of a pan, put the chicken on the citrus and pour the pomegranate mixture over the chicken place the remaining citrus fruit on top of the chicken and scatter the thyme over the top. Bake uncovered for 1 hr 25 min.
*Note: If you want the skin to crisp up, remove the fruit from the top of the chicken the last 25 minutes of baking.
