Pulled Chicken Sandwich

Let’s talk sandwiches.

Make a fun sandwich bar for dinner and the kids are sure to be excited over it, assembling sandwiches each to own liking and trimming them to perfection. One of my favorite protein choices for this is pulled chicken. Being that it is so simple to make, with flexible timing and preparation methods, whether you cook it all day in the slow cooker or just 15 minutes in the instant pot you can work it into your schedule with no effort and your family is sure to love it.  

I made this chicken recipe once on a whim when I was running late and needed dinner on the table within an hour, thanks to an overstock of bread from my baking experiments I had a stash of rolls in the freezer to accompany the chicken. My kids loved this dinner since they feel like they “made” dinner when they get to assemble their own sandwiches.

 

 

If you’ve been anywhere on social media in the last year, you’ve probably seen someone posting pictures of theirs along with links to Insta-Recipes and tips and tricks on how to Instant Pot just about every food or recipe you can think of.

For me though, it’s all about time. 

If I am running late or forget to defrost the meat for dinner, the Instant Pot takes care of that. I can serve up a meaty mushroom barley soup in 35 minutes or take frozen solid chicken thighs and be enjoying their tender, juicy, fully-cooked goodness in 40 minutes! 

It’s a game-changer for busy Moms and families.

If you’re not already familiar with an Instant Pot, it’s essentially an electric pressure cooker. But don’t be fooled - that’s just the beginning. And don’t be scared either, because this is nothing like the rickety old stovetop pressure cooker that our Moms, Grandmas, Omas, and Bubbes used. Anyone else remember that hissing sound from their childhoods? 


Don't own an instant pot? Don't worry I got you,  I also included a slow cooker version of this delicious pulled chicken.

 

Pulled Chicken

1 medium onion diced

3 Tbs tomato paste

1 cup orange juice

1 jalapeno

1 Tbs smoked paprika

2 tsp garlic powder

1 tsp salt

¼ tsp black pepper

2 Lb skinless boneless chicken breast

 

Add the first 8 ingredients to your instant pot and mix it all together, then add the chicken breast.

*Set the instant pot to high pressure for 12 minutes. When finished, turn the steam valve to the venting position to release the pressure.

Alternatively you can do this in a slow cooker on high for 4 hours.

Transfer the chicken to a plate and shred with 2 forks while hot. Return the chicken to the pot and stir to coat.

Serve the chicken with buns and toppings
